Shannon made this dish for the weekly cooking challenge in the Facebook group Truck Chopped which you can find HERE in case you would like to join group owner Marvin Colbert and other truckers in creating inventive and unique dishes cooked on a semi truck!
Chipotle sweet potato chicken wonton soup
Half a chicken thigh (cooked & chopped)
1/4 c sweet potato (cooked)
1/2 chipotle pepper (diced)
Mix all ingredients together & place in wonton wrappers.
2 c chicken stock
1 sliced mushroom
1 scallion (green part only)
Place into 2 c boiling chicken stock. Add mushrooms of desired. Cook 3-4 minutes. Top with scallions.
1/4 of an apple (diced)
Lightly sauté apples in a bit of butter with cinnamon. Let cool. Place about 1/4 t cream cheese on wonton wrapper, spoon on apples. Deal wrappers & dry in butter for 1-2 minutes on each side until crispy. To with more cinnamon.

Café Dré recently added the Veggeti to the kitchen arsenal, so tonight's dinner was Chicken with Lemon Pepper seasoning and Zucchini Noodles with Hot Madras Curry Powder. I'll definitely make this again.
