Crockpot Shrimp Boil

Appliance used: slow cooker.

Thought I would share a couple of my recipes. If you try them let me know how they turn out. Keep in mind they make quite a bit but you can cut the recipe in half.

Shrimp Boil

1 1/2 lbs Small Red Potatoes
5 cups Water
12 ozs Beer or Chicken Stock
1/4 cup Old Bay
1 Onion
4 Garlic Cloves (or minced)
1 lb Cooked Sausage
4 Small Ears Corn
2 lbs Large Shrimp (Tail-On)
Cajun Seasoning (To your taste)
2 Lemons

Add water, beer, Old Bay, and Stir
Add Onion (cut into quarters)
Squeeze Lemons over and add Lemon Halves
Add Cajun Seasoning
Cook on Low for about 3 Hours
Add Sausage and Corn
Cook about 1 1/2 Hours
Add Shrimp
Turn on High and cook another 1/2 Hour

Crockpot Jambalaya

1 lb Boneless Skinless Chick Breast
1 lb Smoked Sausage (Cooked)
1 lb Cooked Shrimp (Tail-On)
1 Can Crushed Tomatoes
1 Onion
1 Green Pepper
1 Cup Chicken Broth
2 Tsp Cajun Seasoning
1 Tsp Cayenne Pepper
2 Cups Instant Rice


Put all ingredients in Crock Pot
Except Shrimp and Rice
Cook on low 4-6 hours
Put Rice and Shrimp in
Cook another 15-20 minutes
Enjoy!!

Some drivers don't understand how a bunch of us can cook on the truck. Where we find the time, they don't have certain appliances some of us cook with etc. This is a prime example of how little you need to be able to eat healthy and decent on the truck! You do need a cooler/fridge obviously or if you don't have one you can go to a store if you are able to, buy the ingredients and cook but of course that is usually the hardest part of it all.

Tony cooked the chicken until done in the lunchbox, which is usually an hour to hour and a half, you can add the veggies if you like or microwave them separately if you have one. Quick and easy!

Shrimp and Veggie Stir Fry

On the Woo Pig Sooie Rollin Cafe we fixed up a shrimp / veggie stir fry.
2 small potatoes
1 zucchini squash
1 can sliced mushrooms 
1/2 Vidalia onion
1 can baby corn
Fried up in a bit of olive oil and seasoned with garlic and Season All.
When done removed from skillet and added butter, shrimp, lemon pepper and lime juice. Cooked till brown.
Mixed with veggies to make a great stir fry.

The pictures explain it all! Wendy created the 'zoodles' with her veggetti creating noodles out of a zucchini. The sauce is Bertoli's carbonara sauce.
