Boiled Eggs on Lettuce, Avocado, Tomato

Boil however many eggs you want for breakfast; I boiled 3.
Fry up some bacon and set aside on some paper towels so they can soak up the excess fat. I used low sodium bacon.

Then wash 1 head of romaine lettuce, cut the bottom and top off and put a few leaves on your plate; you can store the rest in the fridge.

Slice up an avocado and tomato and divide them over the leaves.

Peel the eggs, slice them in 3 parts each and also divide over the plate.

Put the bacon on your plate, sprinkle a little salt and pepper and enjoy your breakfast!

Ingredients for the guacamole. Make it as direction on pack. I added some red onion and tomato. Here is the finished product:

Buy a pack of tortillas. Cut tortilla in 8 piece. Take some olive oil and salt. And rub on the tortilla.

Put on George Foreman til they get crisp about 3 minutes.

Steak rolls for the Sandwich. Take some butter and garlic mix together and butter the bread. Put the rolls on the George Foreman grill until they are golden brown.

In the Ninja, heat some olive oil. Put the sweet peppers and red onion in and sauté.

 Grill the Beef skirt til done. This morning I marinade it in olive oil, garlic powder, cumin, onion power, chili powder. Half teaspoon of each.

Black beans, corn and Uncle Bens quinoa and brown rice.

Cooking On the Truck Contest #2 Janeil's Junket entry Mesquite-Spiced ribs, Brisket Mesquite Spiced, Grilled Corn on the Cob,Seafood Stuffed Portabella Mushrooms,Cherry Cheese Cake 
Mesquite Spiced Ribs and Brisket
3T Mesquite Seasoning
2T meat marinade( We used Mesquite Smoke Liquid)
Cook ribs and brisket in crock pot for 2-3 hours on high with a 1/2 cup of BBQ sauce(I used Gates BBQ)
Wrap in tin foil cook on grill for abour an hour to hour and half

Seafood Stuffed Portabella Mushrooms
3 portabella mushrooms with steamed remove
1 pkg frozen crab cakes
3 peppered bacon strips
clean out mushrooms, place a frozen crab cake in the center
wrap with peppered bacon( We used toothpicks to hold it together)
place on a piece of tin foil spayed with butter
place on grill for about half hour to hour, spray butter a couple times on them so they don't dry out

Corn on the cob
spray with butter and place on grill cook until done

Cherry Cheese Cake
We used a no bake box brand and placed fresh cherries on top with the cherry filling.
this meal takes about 2-4 hours from start to finish

Ok so mine is super simple and I promise you it taste like heaven on earth lol
So what I have is thick cut pork chops with sweet baby rays sweet vavidalia onion BBQ sauce, a piece of broken up onion ( I love onions lol ), and green beans with red potatoes and garlic butter, last but not least is corn can't get anymore simple than that and stays true to BBQ lol


The pork chops also has steak and chop seasoning on it
Nothing was measured it was all to taste but all the pictures are there just put how ever much you like your taste may be different from mine

Bacon Wrapped Pork Chops with Salad and Corn on the cob

I cut these chops off a whole porkloin, wrapped a slice of bacon around secured with toothpick, the Grillmaster grilled them smoking them with his little smoker box of mesquite chips, corn ears were seasoned with course ground salt n pepper & season salt, wrapped tightly in foil grilled 15 min removed from heat while chops cooked, retuned to grill out of foil for abt 10 min to get char n smoke flavor served with my luscious fresh garden salad, a mix of greens, peppers, red onion, shredded carrots n tomatoes, little bit of lemon zest before serving!!

Tonight in Las Vegas 
Smoked Pork Chops
Potato Salad
Snap Peas
Garlic Bread

Pork Chops
Were smoked at home with 60% hickory and 40% white oak then frozen for later use.
Thawed and seasoned with Weber roasted garlic and herb seasoning from Wal-mart, sea salt, fresh ground black pepper. place on hot grill to your preference.

Potato Salad 
Golden Yukon taters, steamed eggs, dill relish, 2tsp sugar, 1/3 cup milk, mayo 1 single cup liquid ranch dressing, sea salt, fresh ground black pepper, onion powder, garlic powder, sliced green onions.
Boil taters and the steam cooks the eggs at the same time for 20 minutes.both are done at the same time perfectly. 
Separate bowl mix sugar, milk, ranch, mayo, mix thoroughly. drain taters, peel eggs, dice both, add mixture to taters and eggs, add dill relish, mix again, add dry seasonings mix again, taste, add sliced green onion, and refrigerate.
Snap Peas 
No cooking required

Garlic Bread, hot off the grill.

**Entry for grilling contest**
Pepper steak roll-ups, potato salad with corn, bacon and arugula, blue cheese stuffed bacon wrapped mushrooms.
STEAK ROLL-UPS:
Cube steak, pounded thin. *Don't skip this part* (can use heavy can if you don't have meat mallet. Place them in baggie so you don't have a mess. :))
Sweet bell peppers and onions, cooked until soft and chopped.
Thick sliced Bacon
Shredded cheese
Season cube steak to your liking. Place chopped peppers and onions and cheese in center of steak and roll up tightly. Wrap with bacon as shown in pics(securing ends first so everything doesn't fall out of ends while cooking) and grill until mostly done. Add Bbq sauce of your choice. (I used Sweet baby rays raspberry chipotle)
POTATO SALAD with corn, bacon and arugula:
2 lbs small new potatoes (I used the ones already washed and ready to microwave. Savory herb flavor)
Salt and pepper
6 slices cooked, crumbled bacon
3 tablespoons Olive oil
2 tablespoons red wine vinegar or could use Apple cider vinegar also.
1 tablespoon Dijon mustard
1-2 ears sweet corn (about 1 cup), cut from the cob
1/2 small red onion
1-2 cups baby arugula
1/2 cup chopped flat leaf parsley
Cook potatoes, set aside. In a large bowl mix together the oil, vinegar, mustard, salt and pepper. (Also add spice pack from potatoes, if you buy the kind shown below) mix well.
Add the rest of the ingredients to the oil mixture and mix until coated.
BLUE CHEESE STUFFED MUSHROOMS:
Clean and remove stem from mushroom caps. Stuff with blue cheese and wrap with one slice slice bacon. Secure with toothpicks if necessary. Grill until done.

Meat loaf
1 lb ground beef
1 lb pork sausage

1 pkg meatloaf seasoning 
1 cup crushed crackers or seasoned croutons
1 can hunts sauce for meat loaf
Cook on grill for 1 to 1 1/2 hr
Taters of choice tossed with Evo/parsley salt and pepper to taste grill along with meatloaf
Green beans chopped bacon salt and pepper to taste grill along with meat loaf

From the THE GOLDEN PASSAGE EXPRESS: (Name changed to go with the future ministry truck for God). Meal made by James Partin and carie partin.
ENTRY FOR CONTEST:
GROCERY LIST:
walmart:
One pkg of two butterfly pork chops
1Box stove top stuffing mix
Mc cormick garlic salt
Mc cormick grill mates roasted garlic and herb.
1Pkg. French style green beans fresh from produce section.
Two ears white corn
Aluminium foil.
One lemon squeeze bottle produce section.
1small sweet onion
Olive oil
Pepper
Parmesan cheese
ziplock bag
MAIN MEAT:
GRILLED BUTTERFLY PORK CHOP: season chops with mcormick garlic salt and grill mates garlic and herb.
Grill till tender and not pink.
SIDE DISHES:
1. TWO EARS WHITE CORN:
wrapped in aluminium foil with a dab of butter. Grilled till tender.
2.LEMON STOVE TOP STUFFING:
( mix stuffing mix with 1/2 c. Water, 1 Tbsp lemon juice, mix till moist put in pan for lunch box. Cook approx. 45 Min. Till moist and heated through.)
3.MARINATED GREEN BEANS: ( place green beans in a ziplock baggy add 1Tbsp lemon juice, 1Tbsp olive oil, 1tsp. Garlic salt, pepper to taste, 1small sweet onion cut in wedges. Mix well in baggy marinade 10 min. Remove from bag pour in a foil pouch to grill with 2Tbsp. Parmesan cheese. Grilled till tender.
This meal was very tasty. Lol it drew in a crowd at the TA.
