Apple Crisp

I have a crust mix premade from home consisting of flour, oatmeal,brown sugar, salt. Blend some butter in with it using a fork when going to make a crisp. Lined the small pan that comes with the ninja with aluminum foil(aids in clean-up). Lined the bottom with enough crust mix to be about 1/4 inch (I didn't use exact measurement ). Peeled and thinly sliced 5 gala apples and put on top of crust. Put a handful of crust mix over apples. Sprinkled lightly with cinnamon and nutmeg. Top with walnut pieces. Dot with butter. Preheat ninja at 350 on bake setting. Bake for approximately 1 1/2 hrs until apples are cooked and crust begins to brown.

Spotted Dick

Appliances used: Electric skillet and Aroma.

Spotted dick is dessert 
1/4 cup of dried fruit I used dried pomegranate raisins 
3/4 cup flour 
8 tsp sugar 
1/2 tlbs baking powder 
1/2 cup cold butter 
4 tlbs milk 

Mix dry ingredients add cut up butter mix until nice and smooth add milk and mix add fruit and mix will be sticky. I used silacon cupcake cups spooned batter into cups wrapped with foil put into steamer basket and steamed for 1.5 hrs in the aroma

Custard for the spotted dick 
3/4 cup milk
3 lg egg yokes 
8 tsp sugar 

Warm milk slowly add to beaten egg yokes and sugar. Add back to pan and heat to thicken. I used electric skillet for this

Cooking On the Truck Contest #2 Janeil's Junket entry Mesquite-Spiced ribs, Brisket Mesquite Spiced, Grilled Corn on the Cob,Seafood Stuffed Portabella Mushrooms,Cherry Cheese Cake 
Mesquite Spiced Ribs and Brisket
3T Mesquite Seasoning
2T meat marinade( We used Mesquite Smoke Liquid)
Cook ribs and brisket in crock pot for 2-3 hours on high with a 1/2 cup of BBQ sauce(I used Gates BBQ)
Wrap in tin foil cook on grill for abour an hour to hour and half

Seafood Stuffed Portabella Mushrooms
3 portabella mushrooms with steamed remove
1 pkg frozen crab cakes
3 peppered bacon strips
clean out mushrooms, place a frozen crab cake in the center
wrap with peppered bacon( We used toothpicks to hold it together)
place on a piece of tin foil spayed with butter
place on grill for about half hour to hour, spray butter a couple times on them so they don't dry out

Corn on the cob
spray with butter and place on grill cook until done

Cherry Cheese Cake
We used a no bake box brand and placed fresh cherries on top with the cherry filling.
this meal takes about 2-4 hours from start to finish
