This was all cooked in an electric skillet.
Large carton/tub of mushrooms whichever kind you prefer
3 slices of thick cut bacon (can omit if you want to keep it vegetarian)
Half an onion
5 cloves of garlic (I love garlic so use less if you're not a big fan)
1/4 cup heavy cream
1 carton organic vegetable broth
First dice the bacon, mushrooms and garlic and brown them in a little avocado oil. Then add the diced onion and let it all brown/glaze up.
Add 2 tbsp of butter and 1/4 cup of flour and stir it well. Let cook for a minute to get rid of the flour taste.
Add the vegetable broth, tbsp of soy sauce and pinch of thyme. Let simmer for a few minutes, turn off the heat and add the heavy cream. Let the soup sit for a few minutes and enjoy!
